Created exclusively for The Temple Bar Pub, this rare single-release expression of Dunville’s 1808 is a celebration of place, cask, and craft. With an outturn of just 391 bottles, this is a strictly limited edition — a whiskey designed for collectors, connoisseurs, and those who appreciate singular cask influence.
Matured in Manzanilla sherry butts sourced from Sanlúcar de Barrameda, this whiskey is shaped by one of the most distinctive styles of sherry maturation. Manzanilla, aged under flor near the Atlantic coast, is celebrated for its freshness, subtle salinity, and refined dryness. That maritime character weaves seamlessly into the spirit, creating a profile that is both elegant and unmistakably individual. Bottled at a natural-feeling 46% ABV, it retains full texture, structure, and aromatic complexity.
On the nose, crisp green apple and ripe pear lead, followed by toasted almonds, chamomile, and soft honeyed malt. A gentle sea-breeze salinity and fresh bread note lend lift and precision, hinting at the coastal origins of the cask.
The palate is silky yet structured. Layers of vanilla cream and malted biscuit unfold into dried orchard fruit, marzipan, and white grape. The Manzanilla influence reveals itself in roasted nuts, salted caramel, and a refined savoury edge — a delicate briny accent that enhances balance and depth rather than overpowering.
The finish is long, clean, and gently drying, leaving echoes of oak spice, almond skin, and a subtle mineral freshness.
This is Dunville’s 1808 presented in a rare, gastronomic style — a whiskey of nuance and distinction. With only 391 bottles released, it stands as a true Temple Bar exclusive, rewarding slow appreciation and pairing beautifully with cured meats, aged cheeses, or simply a moment worth savouring.
